Authentic pizza is a very simple dish. But eating pizza in Naples, Italy, is a sublime experience. The crust is made from special, finely milled flour, active yeast and pristine water that bakes up tender and light. The tomato sauce is made from San Marzano tomatoes (only grown around Italyʼs Mount Vesuvius), fresh garlic and extra virgin olive oil; it is redolent with the flavors of southern Italy. The buffalo mozzarella is made from the milk of water buffalos and adds a unique, savory tang. Aliño imports San Marzano tomatoes, artisanal buffalo mozzarella and ʻ00ʼ flour from Italy weekly. We even had our wood-fired ovens custom

In 1891 King Umberto I and Queen Margherita of Savoy visited Naples. A pizza maker baked them a pizza named in honor of the queen, whose colors mirrored those of the Italian Flag: red (tomatoes) white (mozzarella) and green (basil) This is now known as the classic Napoletana pizza today.
